Simon & Garfunkel Vinegar

Ingredients
8 ozs white wine vinegar
4 sprigs parsley
4 sprigs sage
4 sprigs rosemary
4 sprigs thyme

Thoroughly clean and dry each of the sprigs of herbs. Put the herbs in a bowl and with a wooden spoon or muddler, slightly bruise the herbs. You may also choose to use a mortise and pestle for this purpose. Put the herbs into a sterilized sealable jar or jug. Pour white wine vinegar into this container. Let this steep for two to four weeks. Once you have poured this into decorative bottles you may then add fresh herbs for a commercial look. (If it is strictly for your use, you may choose to leave the old "fruit" in the jar.) As long as the herbs are covered with vinegar, they will not deteriorate.
